2 cups onion
3 cups broccoli
1 sliced mushrooms
Dash of thyme
¾ tsp. black pepper
3 cups egg whites
1 cups fat free mozzarella cheese

Lightly spray an iron skillet and heat on medium. Sauté onions until clear. Add broccoli and continue to sauté for 4-5 minutes; add mushrooms and cook until soft. Sprinkle with thyme and black pepper. Reduce heat to medium-low and pour egg over vegetables. Turn heat to low and continue to heat. As eggs solidify sprinkle cheese on top. Heat on stovetop until edges begin to firm, then place in oven at 350 degrees until center is firm.
