Ingredients:
2 cups fat-free
cottage cheese
5 tbsp.
fat-free Parmesan cheese
¼ tsp.
hot chili flakes
2 tbsp. fat-free chicken broth or vegetable broth
1 medium
onion, chopped
½ tsp.
minced garlic
1 cup broccoli
1 cup cauliflower
florets
1 small
red bell pepper, sliced
1 large
carrot, shredded
¼ lb.
sliced mushrooms
Method:
Combine cheese, parmesan and hot chili flakes in a food processor or blender and mix until smooth and creamy. Sauté onion and garlic in broth at medium-high heat. When onion and garlic are softened, add broccoli, cauliflower, red pepper and carrots; cook for about 6 minutes, then add mushrooms and cook until softened. Stir in blended cheese mixture and cook on low heat. Mix with cooked pasta.
Serves 8 people.
