Delicious Food at Wellspring Florida
Whoever said food that tastes good can't be good for you never tried the food at Wellspring Florida! Our menu is focused on very low-fat, low-density food that campers love—like chicken fingers, sweet potato fries, bacon and egg sandwiches, French toast, burgers, and spaghetti with meat sauce. We want our campers to learn a way of eating that they'll choose to stick with for years to come. So not only do we serve up delicious favorites, we teach campers to cook, order, and identify “Wellspring-friendly” food that will keep them on the path to weight loss success.

Our secret is the way we prepare food, using very low-fat, low-density cooking methods that keep the flavor and texture that campers love, minus the added fat. Wellspring Florida campers enjoy a range of delicious foods each day. Breakfast, lunch, dinner, snacks, and dessert are specifically designed to satisfy, while providing campers all the energy they need to stay active. And in addition to the entrees we prepare at every meal, campers can eat as much as they want from the "uncontrolled food bar," a large salad bar of soups, veggies, salads, cottage cheese, fresh fruit, yogurt, and other no- or low-fat favorites.


Campers do not have to adhere to any calorie limits at Wellspring Florida. Rather, we ask only that they stay below 20 grams of fat per day, and that they self-monitor everything they eat (write down food items eaten and fat and calories). This way campers learn to become accountable for their own food choices, and can discuss with their Behavior Coaches the impact that specific food choices have on their weight loss, thoughts, and actions.
Culinary and Nutrition Training
All parts of the Wellspring Plan focus on helping campers develop a self-sustainable plan for weight loss. A major component of this is the culinary and nutrition training that campers receive. In trips to local grocery stores and restaurants, campers learn how to substitute favorite foods for healthier low-fat, low-density versions so they know what to shop for and order when they leave the structured environment of camp. And in the culinary classroom, campers learn everything from basic chopping and recipe development techniques, to grilling, baking and dry sautéing the many delicious menu items they've been eating at camp.
